    I made the pasta. Outstanding. I'll never go back to store bought. But the pasta aglio e olio needs some guidance. Probably won't make it for a date night when alfredo sauce is so unfuckupable

    With my 2nd attempt at gatcho de pepe I found that Romano-picarino to be far far better than generic Romano + Parm Regiano. I also cooked my pasta nest in only as much water as I needed in a small saucepan for more concentrated starch water.

    Hey guys, just so you guys know you need a pot or something to boil the pasta in. I tried to throw the pasta into a river, it just floated away. So you should get a pot to cook it in.

    I tried making homemade pasta for my bf on our first Valentine's day together and I did it by hand. Didn't come out very well lol. I cant wait to try this!!

    Very few traditional recipes combine olive oil, eggs and semola. Most semola doughs use water, not eggs, and definitely not olive oil. 00 flour recipes usually include eggs and in some parts egg yolks, but again, usually not olive oil. Additionally, there's no reason to add salt in the dough given that you salt the water. There is a lot of regional variation.
    To be fair this video is roughly 100x better than the 'Tasty' video about 'the best homemade pasta.
    Cacio e pepe is ONLY pecorino romano (it's not called 'romano' cheese). Pecorino romano is with sheep milk. Also, no Parmigiano Reggiano. It would be wise to include less salt than normal when using Pecorino Romano given that it is salted.
    The pasta machine advice is good, though.
    Source: Italian with a mother whom used to teach Italian cookery. I also make fresh pasta very often.

    Hello, I have fallen in love with your show. I don't get to catch your Twitch broadcasts but i always watch the newest and even go back and watch the older shows. I want to express my gratitude to you for making such an entertaining and amazing youtube show. People like you are what make this place so amazing. I started coming to youtube to watch Gaming and funny videos do to my asthma being really bad, it inspired me to want to try even if i couldn't do much and still can't do much, to start my own journey to try and be entertaining and make people smile when they are having a bad day. People like you inspired me to want to do this and though its not much now and i still put health first i try and stream when i can on twitch.
    If i ever could id love to meet you and so many other youtubers who changed my life when i was in a bad place. You are an amazing man and i hope to learn a lot more as i have been learning to cook from my father since i could see over the counter about age 7. i haven't gotten to try much but i did get to try that trick with the tinfoil on a steak and letting it rest. It came out amazing, it was a perfect rare-mid rare i drool even now thinking of it.
    Sorry i get off topic i have ADHD, but what im trying to say is please keep being amazing and making theses shows

    So I tried making this, proceeded to pour too much flour onto the surface, added the eggs and had a spillage, then the eggs dripped over the counter along with flour onto my dog, then I proceeded to try and then had a breakdown. This is why we need measurements.
