    What is the difference between nigiri, maki, sashimi, and sushi?
    Sushi is a vinegared rice served with vegetables and fish (and delicious). To newcomers, it can be a pretty scary food to try out, a bunch of foreign words and not a lot of detail about what you’re ordering!

    Sashimi is not -sushi- (although it is a common misconception). It is actually a Japanese dish that is only thinly sliced raw fish or meat --- and it doesn't come with rice.
    Meanwhile, nigiri and maki are simply common types of sushi. is just raw fish on top of rice --- no seaweed.
    is layers of fish, veggies, and rice wrapped in seaweed.
    With that being said, I recommend maki for most beginners as it fits the stereotypical “image” of sushi- while also being delicious.
    When ordering sushi, it’s okay to ask lots of questions! Just keep an open mind, try lots of variety, and don’t use too much wasabi and it should be a good time!

    Broadly speaking, “sushi” is anything made with vinegared/flavored rice, the “su” meaning vinegar in japanese.
    Thus, nigiri (hold in the hand) zushi, is the single piece sushi most commonly associated with the word, also called Edomae zushi for its origins in old Tokyo when it was still called Edo.
    Maki (roll) zushi is any sushi wrapped in nori and/or rolled. There is also temaki (hand rolled) zushi, chirashi (spinkled) zushi and oshi (pressed) zushi.
    Sushi does not always involve raw fish; anything can be sushi as long as it has the rice.
    Sashimi is raw fish, sliced and consumed without rice, the word meaning “pierced flesh” in Japanese. These days, the word is also used to refer to any dish prepared cold, sliced, and eaten like raw fish sashimi, e.g. “sashimi konnyaku” or “gyu sashi” (raw sliced beef).

    Sashimi is a very old dish.
    In it’s evolved form, it is slices of raw flesh (strictly speaking, not only fish can be used for sashimi) that may however be cured or aged, or even semi-cooked or otherwise lightly processed. Squid sashimi is often blanched for a few second, for instance. Some white fish like suzuki is occasionally dusted with starch and flash-blanched by pouring boiling water on it, before it’s thrown into an ice bath. Etc.
    In the “classic era” (Heian), around 800 AD, the Imperial Court were fond of eating raw fish, brought them from the coast at all speed. Back then, the raw fish wasn’t yet cut with great art, as it was served mixed with a sauce that’s the ancestor of miso. With the rise of the Tea Ceremony culture and the aesthetics loved by the samurai, sashimi became increasingly refined and a main feature of the emerging kaiseki ryori. The traditions for modern sashimi all spread from kaiseki cuisine, including the triad of companions.. grated daikon, shiso leaf, wasabi (and their many variants, some pretty common but much lesser known outside Japan and some rarely used outside of the kaiseki environment).
    Sushi originated as a street food in the city of Edo in the 18th century. It’s a modern adaptation of an old method to preserve river fish from the Kansai area. The name means “sour rice”. Rice was inoculated with a mold, and whole fish mixed with that and salt, placed in barrels to ferment and age. During the long fermentation (a year, if there wasn’t any famine), the sugars turned to acids and the rice goo became sour. It was not eaten, just the aged fish. That wasn’t that much to the taste of the people in Kanto (Tokyo region) and apparently still isn’t. In the Edo adaptation, people started fermenting seawater fish for much shorter periods. The rice was by then not that sour, and was still in grain form and edible. Nigiri, a handful of the sour rice (thus the name related to to “to grasp”) shaped to hold a piece of fish appeared. They were much larger than today’s. The next step was the invention of rice vinegar (also called “su”, the word for “sour”), that allowed to get rid of the fermentation process altogether. Fresh rice was now seasoned, and fresh fish was just cured in salt and then in vinegar. The modern nigiri, much smaller, owe something to the rationing of rice because of the war and its aftermath. With modern technologies and means allowing it, sushi culture evolved more and more toward using sashimi as topping, through in the purest Edo tradition most toppings are in some fashion still processed by aging, curing etc. and some cooked toppings like anago and a sponge-like version of tamagoyaki (closer to datemaki) also became common.
    Makisuzhi are made of sushi spread over a piece of nori sheet and rolled with a mat or by hand (tekamaki). They are an adaptation of a dish originally made with plain rice.

    Sashimi (刺身) refers to raw sliced meat. It comes from the words 刺 (sasu - to slice) and 身 (life, or more appropriately in this case, living flesh, i.e. - meat).
    Sashimi is served with just the slices of the fish, and has no rice. As with Sushi, it is often served with a dab of wasabi and soy sauce.
    It’s important to note that Sushi and Sashimi are distinct types of food, even if the main ingredient of Sashimi (the fish) is often included in many different types of Sushi (hence the misconception that Sushi is raw fish)

    Sushi (寿司 or 鮨) is a blanket term that refers to Japanese food made out of vinegared rice. There is a great misconception in the West that Sushi refers to raw fish, but what they actually are referring to is Sashimi.
    The words are from 寿 (Su - matured) and 司 (shi - rule), it’s an antiquated use of the words which refer to seasoned/fermented rice, as in vinegared rice. It actually means “sour-tasting,” referring to the sweet-sour taste the rice takes on after being soaked up in vinegar for months. 鮨, the other way of writing Sushi, contains the radical for fish 魚 - as Sushi was originally a fermented rice dish where the vinegar fermentation prevented fish stored with it from spoiling.
    Today, modern sushi takes all forms but the key ingredient that makes the dish is the vinegared rice. It is often served with wasabi and soy sauce, although a lot of modern fusion sushi is served with a mayo sauce instead.

    As a Vietnamese, I can say that we often eat Balut after the eggs was laid 7-8 days so they won't have feathers yet but only eyes and blood vessel, feathers rarely appear. Also, we eat Balut with Fish sauce, salt and pepper so it doesn't taste all that bad
